This product is the "Rice Bag Series Shinnosuke ver.", grown under contract with local farmers.
"Shinnosuke" is a next-generation rice that Niigata Prefecture developed over a period of more than 10 years in an effort to develop a rice that surpasses Koshihikari.
In order to avoid putting too much stress on the sake during the pressing process, we pressed it slowly without applying as much pressure as possible, resulting in a sake that is free of impurities and easy to drink.
Basically, the way this product is made changes depending on the quality of the rice each year. The specifications are not disclosed.
We do not use sake rice, but instead use only table rice "Shinnosuke", and we hope you will enjoy the unique flavor of our brewery.
