This product was born from the fusion of the master brewer's playful spirit and technique, using only the core of the brewing process, "shubo" (starter yeast). When master brewer Watanabe tasted sake that had been filtered during the component analysis process during the production process, he thought, "The filtrate from the starter yeast is the most delicious!" and decided to commercialize it.
This is a challenging and unique sake that is unique to this brewery and is rare using standard processes.
