This product is the "Rice Bag Series Shinnosuke ver.", grown under contract with local farmers.
"Shinnosuke" is a next-generation rice that Niigata Prefecture developed over a period of more than 10 years in an effort to develop a rice that surpasses Koshihikari. In order to avoid putting too much stress on the sake during the mashing process, the sake is pressed slowly with as little pressure as possible, resulting in a sake that is easy to drink and free of impurities.
Basically, the way this product is made changes depending on the quality of the rice each year. The specifications are not disclosed.
We do not use sake rice, but instead use only table rice "Shinnosuke", and we hope you will enjoy the unique flavor of our brewery.

This sake was born from the desire to make delicious sake using such delicious Koshihikari rice, and has won numerous awards at competitions, including a Platinum Award at the Kura Master in France in 2023. Please enjoy the "power of edible rice" that has been recognized worldwide.
